PRESENTATION

Fromago is an inclusive, cross-cutting project that aims to position Zamora and Castilla y León as a benchmark for cheese and the sheep sector at a national and international level.

Formago will also be very present in the values of social inclusion, especially towards the most disadvantaged groups, with activities aimed especially at them. Rural women, intergenerational integration, disability and marginalisation will be priority aspects that will be worked on in a cross-cutting manner during all the activities carried out.

The event is organised with the support of the Zamora Provincial Council and the support of other local, regional and national institutions, as well as the province's cheese-making sector and other social agents.

It is intended to be an open and inclusive event which, every two years, will take place in the streets of Zamora so that, during those days, cheese will be the protagonist of activity in the city.

In addition, Fromago is an inspiring itinerary that will programme scientific, technical, educational, school, cultural and social activities which, throughout the year, will add value to the project and reinforce its fundamental values based on sustainability, integration and rural development.

FROMAGO ITINERARY

Fromago's main objective is to highlight the importance of agriculture and livestock farming in the province of Zamora, highlighting the important role of the dairy-cheese sector in general and the sheep sector in particular.

All of this will give rise to an International Cheese Meeting, to be held in Zamora between 15 and 18 September 2022. A "street" fair will be held throughout the city, taking advantage of the squares provided by its urban planning.

In this way, a linear itinerary of approximately 2,500 m. has been designed with the occupation of the following spaces, to reach a total of approximately 380 exhibitors:

  • Open spaces of the University Campus
  • Plaza de la Marina Española
  • Plaza de Castilla y León
  • Plaza de la Subdelegación de Gobierno
  • Ramos Carrión Theatre
  • Viriato Square
  • Plaza de San Martín
  • Cathedral Square

In addition, along this itinerary, the aim is to generate exhibition content which, while respecting the city's heritage and its commercial activity, will contribute to the continuity of the visit so that those attending the fair can also acquire knowledge related to cheese and the dairy industry.

On the other hand, as a complement to the meeting, an itinerary of activities has been designed which, from January 2022, will be developed in a complementary way to its organisation, until the main event in September.

TECHNICAL FROMAGO

Objectives

To address innovative aspects of the dairy sector in general and the cheese sector in particular, by organising five technical conferences between January and May 2022.

To bring the scientific community closer to the companies in the sector, so that there is an exchange of necessary information that contributes, on the one hand, to researchers being aware of the needs of businessmen in order to orientate their projects towards them and, on the other hand, to industrialists discovering the latest knowledge available to be able to apply it to their companies.

Collaborators

The conference will have the collaboration of the Department of Agriculture and Livestock of the Regional Government of Castile and León through the Castile and León Agricultural Technology Institute, the University of Salamanca and the Official Veterinary Associations of Zamora and the Association of Agricultural Engineers of Castile and León and Cantabria.

Calendar

The conference will be held on the following dates in the afternoon between 17:00 h and 19:00 h in the facilities of the Campus of the University of Salamanca in Zamora.

Cheese and dairy professionals, producers and processors, veterinarians, engineering graduates and students of related careers.

FROMAGO RURAL

Objectives and contents

To disseminate and promote cheese culture in the rural environment of Zamora.

Seven days will be organised which will have a common structure and will be held in different towns in the province.

The contents of each activity are described below:

  • Presentation of the World Cheese Meeting
  • Conference on cheese, history, types of cheese, importance of the sector.
  • Guided tasting with cheeses of different varieties

Collaborators

The conference will have the collaboration of the Ministry of Agriculture and Livestock of the Junta de Castilla y León through the Agricultural Technological Institute of Castilla y León.

Calendar

The conferences will be held from April to June in the afternoons between 17:00 h and 19:00 h in the municipal offices of different town councils in the province of Zamora where they are determined.

Target group:

Inhabitants of rural areas, interested in improving their knowledge of the world of cheese, history, varieties and sensory properties.

FROMAGO EDUCA

Objectives

To disseminate and promote cheese culture among schoolchildren in the province of Zamora.

To highlight the importance of livestock farming and its role as the backbone of the rural environment and as an essential element for the conservation of biodiversity.

To raise awareness of the origin of cheese and the main cheese-making techniques.

Target audience
5th and 6th year primary schoolchildren in the province of Zamora.

Calendar and content

30 one-hour workshops will be held during school hours between February and June 2022.

Each workshop will have the following structure:

  • Presentation of Fromago
  • The origin of cheese
  • Composition of milk and processes for transformation into dairy derivatives
  • Cheese-making workshop

Each participant will be given a kit to make a cheese to take home.

On the other hand, between 15 and 18 September 2022 and as part of the fair's programme, children's workshops will be held for children aged between 6 and 12 years old, with the following programme:

CULTURAL FROMAGO

Objectives and contents

To highlight the value of pastoral and livestock farming culture in Spain.

To disseminate the importance of transhumance in the conservation of biodiversity.

To discover the important role of the agro-livestock sector in the ethnography of Castilla y León.

Ethnographic Museum of Castilla y León.

Calendar and contents

This initiative will have two main activities:

  • Cycle of documentaries on pastoralist culture in Spain, which will take place in September 2022.
  • Exhibition on pastoral culture and guided visits to the Ethnographic Museum of Castilla y León. There will be two shows in the morning and two shows in the afternoon during the days of the fair. The exhibition will run until the end of September.

Target audience:

The general public, interested in learning about the importance of livestock and transhumance and its mark on the ethnographic heritage of Castilla y León.

PROFESSIONAL FROMAGO

Objectives and contents

To enhance the value of such an important product as cheese in cuisine and catering.

To provide the necessary knowledge to introduce cheese-related products on the menus of restaurants in the province of Zamora.

Calendar and content

This initiative will consist of two seminars to be held in the city of Zamora in March and May 2022.

Each of the seminars will have the same content and, for two hours, will include a description of the different types of cheese, how they are made and their origins, as well as the possibilities for their use in restaurants.

This will be followed by a guided tasting with different types of cheese, which will provide the essential knowledge to be able to identify the products and put them to good use on restaurant menus by incorporating them as main courses in the form of boards or desserts, as well as, as an accompaniment to other dishes.

Target group:

Hospitality professionals from the province of Zamora, interested in learning about the characteristics of the different types of cheese that exist, as well as their appropriate pairing with other products such as drinks, meat, fish, etc.

GASTRONOMIC FROMAGO

Objectives and contents

To promote the value in society of a product as important as cheese, contributing to the increase of its consumption and to the improvement of its valuation.

To provide the basic knowledge so that participants are able to know and identify the main types of cheese, depending on their origin and how they are made, as well as to interpret their most representative organoleptic characteristics.

To discover the techniques for making different types of cheese.

Collaborators

The Spanish network of country and artisan cheese makers, the Zamora Hotel and Catering Associations and José Luis Martín Martín.

Calendar and content

Between 15 and 18 September 2022, the programme of activities planned for the International Cheese Meeting will include 8 guided tastings, 4 show-cooking sessions and 4 food and wine pairings, as part of the fair programme and open to the general public.

In addition, two workshops will be held during the fair on the traditional production of Castilian/Zamorano cheese and a workshop on the traditional production of Torta de la Serena.

Also during the fair there will be a Fromago menu with a wide range of cheeses and a single price for all participants, as well as a selection of two cheese boards to be tasted during the days of the fair in the different participating establishments.

CINCHO 2022 AWARDS

Objectives

To collaborate in the organisation and celebration of the prestigious Cincho awards during the year 2022.

Collaborators

The awards are organised and organised by the Castilla y León Agricultural Technology Institute, a public body attached to the Ministry of Agriculture and Livestock of the Regional Government of Castilla y León, and the Zamora Provincial Council will offer all the collaboration necessary for the event to be held in the city of Zamora.

Target audience

Cheese producers from any country in the world may participate, with their own branded products, representative of a batch intended for marketing. Cheeses produced outside Spain may be presented by distributors in Spain.

Calendar

The organisation and holding of the Cincho Awards will be completed in two phases.

  • The first phase, the selection phase, which will take place during the month of June 2022, will bring together almost 40 prestigious tasters in Zamora to evaluate the entries submitted.
  • The second phase will correspond to the celebration of the awards gala, which will take place during the International Cheese Meeting in Zamora in September 2022.
